The grapes are harvested at the coolest hours of the night. They are then directly pressed for Grenache and bled for Syrah, away from oxygen, to ensure optimal preservation of the aromas.

Settling at low temperature, temperature regulation of must between 14 and 16 °C.

Food & Wine Pairings

Pale pink color with pretty sparkling reflections. Pleasant aromatic complexity on the nose, with notes of small red fruits evolving towards exotic fruits and spices. Round and fresh on the palate, rich in fruity and spicy notes, with a lot of volume and sweetness thanks to the ageing on fine lees.

Food and wine pairing: BBQ stuffed mushrooms, prosciutto melon, grilled Provençal avocados or chicken brochettes with tapenade.

The Mediterranean-type climate, which is typical throughout the appellation area, is marked by a significantly hot, dry season, mitigated by the effect of the landform. Due to the diversity and unique features of the different areas, major zones have been defined by their weather patterns and soil types.

There is a huge variety of soil types but hard limestone in the garrigue and schist soils are the most widespread. There is also gravel washed down by Languedoc’s rivers.
